Unfurling in the glass with notes of warm bread, waxy green apples, pear, dried flowers and smoky walnut oil, the 2011 Brut Nature Blanc de Blancs Clos Sainte-Sophie is showing very well, showing little of the herbaceous qualities that Lassaigne says characterized the wine in its youth. On the palate, it's full-bodied, satiny and textural, with a broad attack that segues into a tensile core, built around racy spine of acidity, concluding with a searingly chalky finish.
