Notes of citrus oil and crisp yellow orchard fruit mingle with nuances of saffron, anise, dried white flowers and warm bread in a complex bouquet, introducing Lassaigne's 2012 Brut Nature Blanc de Blancs Clos Sainte-Sophie, a full-bodied, layered and concentrated wine that's deep and muscular, with racy acids and a finish that's simultaneously intensely saline and searingly chalky. The 2010 was raised in the same Burgundy, Cognac and the Jura that produced the inaugural 2010 rendition. (Issue 244 End of August 2019, The Wine Advocate, 31st Aug 2019)
